Australian Native Cuisine – with Peter Wolfe
Peter Wolfe is an extremely passionate and talented chef who is well known in culinary circles as a specialist in Australian Native Cuisine. Peter’s professional career began in Tasmania working with the salubrious delights of Tassie produce, to the finest of Sydney restaurants, including the royal Sydney Golf Club and eventually settling in Noosa to continue in a position as executive chef for Weller Hotels.
Having come from a rural background with lots of fishing, hunting, growing your own fruit and vegetables as well as searching the bush and beach for culinary treats Peter decided he had to live on a rural property just out of Noosa.
Peter spent the next 25 years working in and around Noosa, cooking at night and raising poultry and pigs and growing herbs, vegetables and fruit for fun during the day. After fifteen years as executive chef at one of Noosa’s hotels it was definitely time to pursue his main passion – Australian bush foods.
In 2002 Peter and his wife Shauna began Cedar Creek Farm Bush Foods. They provide a range of culinary products made from native fruits, vegetables and herbs for retail at local markets and at selected food outlets. With the direct marketing of his unique products, Cedar Creek Farm Bush Foods quickly gained a very good reputation in food circles and have led to a varied and interesting lifestyle to include bush food catering, celebrity chef appearances and escorting culinary tours.
As an expert in Native Australian Cuisine and Bush Foods, Peter has become very sought after by food and home show event organizers as their celebrity chef to demonstrate his expert culinary knowledge as well as his flair of combining the delicate flavours of Australian Bush foods and spices with fresh locally grown produce.
Peter regularly gives talks and demonstrations on Australian bush foods and has a spot on local ABC radio. He has recently been asked to be the face of the Eumundi Markets to promote the superb locally grown produce and food of the region. His cooking demonstrations and cooking classes using local produce have also proved to be very successful in drawing a great deal of media coverage from local and Brisbane newspapers, magazines and television. These shows now range from Townsville to the Gold Coast and as far west as the small Queensland town of Millmerran.
Peter is an avid, active member of the Slow Food organization and has been one of the select 42 delegates chosen to represent Australia at their bi-annual conference “Terra Madre” in Turin Italy this October 2010.
Peter has very successfully combined his great passion for food, travel and meeting and working with people of all different cultures, to enjoy good company, fine food and visit exciting destinations in his work …..if indeed such an interesting lifestyle can be called work.
